How to Make the UK’s Most Popular Cocktails: Recipes from Master Mixologists
10. Tom Collins
A Tom Collins cocktail is a simple mix of gin, lemon and sugar syrup shaken over ice and served in a highball glass with a cherry on top. This deliciously refreshing cocktail is relatively low in alcohol and calories, as it is mainly soda water and ice.
Top Tip from Our Master Mixologists: Serve your Tom Collins in a highball glass and garnish it with a cherry or orange half-wheel for that sophisticated, classic look.
Tom Collins Ingredients:
2 oz gin
¾ oz lemon juice
¾ oz simple syrup
Chilled soda water
Cherry or orange half-wheel for garnish
Tom Collins Method:
- Combine the gin, lemon juice and simple syrup in a shaker
- Fill your highball glass with ice
- Add ice to the shaker and shake for 3-4 seconds
- Add the soda water to the highball glass
- Strain the cocktail into the glass
- Top with more soda if needed
- Garnish and enjoy
9. Piña Colada
Previously Britain’s favourite cocktail for five years on the trot, the tropical and fruity Piña Colada is a creamy cocktail that consists simply of coconut milk, rum and pineapple juice, along with your choice of embellishment and decoration. Maybe we love it so much because it reminds us of our summer holidays in warmer climes.
Top Tip from Our Master Mixologists: Piña Coladas are typically served in a chilled or frozen sling glass garnished with a pineapple triangle for that authentic tropical feel
Piña Colada Ingredients:
2 oz Captain Morgan Original Spiced Rum
1 Maraschino cherry
6 oz Piña Colada mix
2 oz pineapple juice
1 pineapple quartered and sliced
Piña Colada Method:
- Place all of your ingredients (excluding garnish) into the blender and blend until you get a smooth consistency
- Pour the cocktail over ice into your chilled sling glass, garnish and serve
8. Martini
Bond’s cocktail of choice, the classic Martini is shaken or stirred to blend the flavours, served over ice in a martini glass and garnished with an olive or lemon slice.
Top Tip from Our Master Mixologists: The less vermouth you add, the drier your Martini will be, so ask your guests how dry they like their drink to show them you really know your stuff!
Martini Ingredients:
2 ½ ounces of gin
A splash of dry vermouth, to taste
Ice
An olive or a twist of lemon to garnish
Martini Method:
- Fill a shaker halfway with ice
- Add the gin to the shaker
- Combine with a splash of dry vermouth, to taste
- Stir or shake your drink to blend the flavours and dilute the alcohol a little
- Place the strainer on top of your shaker and pour into a martini glass
- Garnish with an olive or a twist of lemon and serve
7. Espresso Martini
The deliciously vibrant and energising Espresso Martini is a perfect blend of coffee and alcohol for those who like their cocktails creamy and caffeinated.
Top Tip from Our Master Mixologists: Add a few drops of almond syrup to enhance the flavours of your cocktail and take it to the next level.
Espresso Martini Ingredients:
1 ½ ounces of vodka
1 ½ ounces of espresso
1 ½ ounces of Kahlúa
1 ½ ounces of milk or light cream
Ice
Optional: Almond syrup
Espresso Martini Method:
- Make a shot of espresso
- Mix the vodka, Kahlúa, espresso and milk in a shaker with ice
- Add a few drops of almond syrup if desired
- Shake or stir, then strain out the drink into your martini glass
- Decorate with a dusting of cocoa powder and a chocolate-coated coffee bean, then enjoy!
6. Woo Woo
The fruity and exciting Woo Woo is a fun and fruity cocktail that’s easy to mix and hard to resist. It’s a three-ingredient drink that you can change up to suit your mood or the occasion.

Woo Woo Ingredients:
1 ounce of vodka
1 ounce of peach schnapps
2 ounces of cranberry juice
A lime wedge for garnish
Woo Woo Method:
- Place the vodka, peach schnapps and cranberry juice into a cocktail shaker with ice cubes
- Shake well
- Strain into a chilled highball glass filled with ice
- Garnish with a lime wedge, serve and enjoy
5. Strawberry Daiquiri
The mouthwateringly sweet and succulent Strawberry Daiquiri is a perfect summer cocktail that’s eternally popular with cocktail enthusiasts.

Strawberry Daiquiri Ingredients:
2 ounces of light rum
½ ounce of freshly squeezed lime juice
1 ounce of simple syrup
1 cup of ice
2-3 strawberries
A strawberry to garnish
Strawberry Daiquiri Method:
- Combine all of the ingredients in a blender
- Blend until smooth
- Pour into a chilled margarita glass
- Garnish with strawberry slices and enjoy
4. Sex on the Beach
Sex on the Beach is a fruity cocktail that is particularly refreshing and enjoyable in the summer. It’s tropical, colourful and a welcome sight at any cocktail party.

Sex on the Beach Ingredients:
1 ½ ounces of vodka
¾ ounce of peach schnapps
½ ounce crème de cassis
2 ounces of orange juice
2 ounces of cranberry juice
Orange slice or maraschino cherry to garnish
Sex On The Beach Method:
- Pour all of the ingredients into a cocktail shaker with ice cubes
- Shake well until everything is combined
- Strain your drink into a highball glass
- Garnish and serve
3. Long Island Iced Tea
The Long Island Iced Tea is a brilliant blend of intoxicating and refreshing. A potent combination of rum, vodka, tequila and gin, it is finished with a mixture of sweet cola and sour lemon juice. There’s actually no tea involved in this classic cocktail recipe, but the colour and flavour profile is reminiscent of a cool glass of iced tea on a warm summer’s day.
Long Island Iced Tea Recipe:
1/2 oz vodka
1/2 oz gin
1/2 oz light rum
1/4 oz tequila
1/2 oz triple sec
1 tbsp. fresh lemon juice
6 oz cola
Long Island Iced Tea Method:
- Pour the vodka, gin, rum, tequila and triple sec into a highball glass with ice
- Stir
- Top the glass off with cola
- Add a straw and serve
2. Mojito
The Mojito is a wonderfully refreshing and summery cocktail with a fresh, minty taste. Blending white rum with mint, lime juice, sugar and soda water, it’s a relatively low-alcohol option for those who want a less intoxicating tipple that will still give them a pleasant buzz.
Top Tip from Our Master Mixologists: Always crush the mint leaves for your Mojito before adding them to the drink to release their oils and enhance the minty flavour.
Mojito Ingredients:
10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice
1 1/2 fluid ounces white rum
1/2 cup club soda
Mojito Method:
- Put the sugar, mint leaves and club soda into a highball glass
- Muddle well to dissolve the sugar and release the mint flavour
- Squeeze the lime juice into the glass and drop a slice into the glass
- Add the rum
- Stir well
- Fill the remaining space in the glass with ice cubes
- Top with club soda
- Garnish with a mint sprig and enjoy
1. Pornstar Martini
The UK’s most popular cocktail for 2019 is officially the Pornstar Martini, a modern classic first created in 2002 by London-based bartender Douglas Ankrah at the Townhouse bar in Knightsbridge. Many variations of the recipe exist — some with plain vodka, others with vanilla vodka and some switching out passion fruit juice for apple juice.

Pornstar Martini Ingredients:
2 ounces of Vanilla Vodka
1/4 cup of passion fruit juice
1/2 passion fruit, sliced into rounds
Prosecco
Pornstar Martini Method:
- Pour the vodka into a martini glass
- Top with passion fruit juice and a slice of passion fruit
- Serve with a shot of prosecco
